Unfortunately I misread the instructions on the cook time and cooked it at High pressure for 25 minutes slow release for 10 minutes. The flavor was amazing but some of the pork pieces were a little dry. The sauce was amazing over the white rice!

I realize with all the soy sauces that go into it, it would be salty but I thought it would mellow with the cooking process. You can double the recipe by increasing the liquid ingredients by 50% and doubling the dry ingredients.

You can also reduce the cooking time by 1 – 2 minutes as the get up to pressure time will be longer.

It was a little bit on the salty side, I used Kikkoman soy sauce for the regular soy sauce – will use the low sodium one next time. I used a pork butt roast with lot of fat marbling that was perfect for this recipe. We served it over white Jasim rice.
I checked with a friend of mine who lives in Manila, Philippines, they use equal parts of soy sauce, vinegar, marinate the meat in the fridge for an hour or longer. After marinating, they braise meat in oil on medium high heat for 2 minutes. I think I will sauté the meat in the future, too.
