I alter it a little, mostly just the spices. I brown shallots and garlic in a cast-iron skillet, brown the shanks, then deglaze the skillet with a little white wine. Then I add everything to the Instant Pot. I usually use small (grape or cherry) tomatoes cut in half – a handful or so – and also add a handful of baby carrots. These always turn out fantastic, and unlike most of the other recipes out there, the sauce doesn’t overpower the lamb. (I swear, some recipes must be created by people who don’t even like lamb, as they’re loaded with tomato paste and red wine, and you can’t even taste the meat. This one is perfect.)5 stars
