Made this for the first time last night. My only real variation from the recipe was to add 2 cans of white kidney beans to strtch out the dish a little. Entered it today in a chili cook-off at work and won first place! It’s really, really good.

I made Amy + Jacky’s Mexican Chile Verde the other night. It was spectacular! And so easy! Instead of having to simmer it all day long, it was tender and perfect in an hour. Win win! 🙌🏼

This chicken chile verde is amazing!!! I also made cilantro like rice to go with it. Next time, a side of pinto beans would be lovely ❤️❤️

Unfortunately my son falls into the 5% or so of people to whom cilantro tastes like soap. Is there anything you can suggest that could be used instead of cilantro or is it a must-have for the recipe? Thank you. We love your recipes and would love to try this one if we can make it work for the whole family.

Last night I made your Chicken Chili Verde. It was loved by all. Per my daughter’s request I added Garbanzo Beans when cooking and after blending they added protein and became a thickening agent. It worked.

It’s funny I have been teaching my girl to cook for years and every now and then she comes up with an idea that is outside the box. It makes me happy because she is going out into the world with the love of cooking and all the skills that I could pass on.

I used pork shoulder instead of chicken and it was delicious! Browned about 3l bs of pork (steak size portions) and later removed it and cut it to cubes. It sure was a lot of meat. Next time I’d like to add the optional peppers as well and add more seeds and then double them (but not the meat).

I have made this recipe a half dozen times and it is ALWAYS perfect. The combination of flavors and the texture of the chicken thighs is amazing. My family loves it and I love this recipe and never change a thing when making. Thank you for all excellent and the creative recipes you make. I always go to your website for instant pot food ideas! I have never been disappointed 🙂
