I used the pot in pot method after first making A & J’s oxtail stew. I didn’t have low- or no- salt broth so instead used Better Than Bouillon Garlic + water and omitted the salt. I placed the pot right on top of raw carrots so no rack was needed. It turned out beautifully smooth and creamy. I should mention I only made half the amount. Next time I’ll make the full recipe!5 stars

I used the first method with 4.5 cups of chicken broth and had no burn issues. The taste and texture was just what I would expect from a restaurant.
