Hi Sacha,

Happy New Year. Thank you for your comment and question πŸ™‚

The ratio in our soy sauce chicken recipe will be more reasonable.

I have 24 cups of water in my pot but using about 100 star anise seems unreasonable. Any input for larger batches?

(I don’t have much freezer space for another master stock πŸ™)

Hi Marcie,

It is a great question πŸ™‚

You will want to strain out all the solid ingredients every time you finished using the stock.

You can store it in the fridge for up to 3 days or place it in the freezer for longer time.

The master stock will get diluted as you use it more. (Meat juice will dilute the master stock).

You will have to taste and adjust the flavor by adding more spice or seasoning as time goes by.

Take care & stay safe!
Jacky

Can you please explain this? Thank you! It looks and sounds delicious!
