I modified the recipe based on our preference by using just fresh ginger, bay leaf and a tablespoon of apple cider vinegar to draw out the collagen. The carcass of one chicken fit nicely in my 3-qt instant pot. It makes a delicious savory tea for sipping on a cold day or to use in other recipes.5 stars

But I’m under the impression that if using cooked chicken carcasses, the resulting stock might not be quite as flavorful. Can a cooked chicken carcass/bones be roasted in the oven for awhile to achieve additional browning? (And if so, at what temperature and for how long?) Also, what exactly is a chicken “carcass” from the store? Is it the complete chicken, or is it what’s left of a chicken after parts of it are removed for other uses? Thanks.5 stars
