I’m confused by this. Why does the top layer matter in the end? You are using the torch. Am I mistaken? Why would the method of cooking affect that final torch step? Thanks!

We haven’t tried using the air fryer lid, but it will probably take a bit longer time.

You can open the lid and check from time to time 🙂

Should be safe to broil the creme brulee as long as the ramekins are oven-safe.

It is a very good choice. The only reason we don’t recommend Ceremonial grade matcha is because it is quite expensive.
