I then put the soybean mixture into a grade 90 cheese cloth instead of using a strainer basket directly in. after all said and done, i like a more soy bean flavor in my milk so will try it with a 1/4 cup more soy bean next time.4 stars

Personally, I like my soy milk pretty strained, so when pressure cooking, I skip the steamer basket all together. I just put the blended soy beans and water directly into the IP and pressure cook as directed. I strain using a fine-mesh sieve after pressure cooking. I find that it makes clean up much easier since the the soy beans would always get into the crevices of the steamer basket otherwise. I like my soy milk a little bit more thin and lightly sweetened, so I do more of a 1:8 ratio of beans to water, and I sweeten with cane sugar after the soy milk is strained.

Here’s why… once I get done making the soy milk, I pull out the inner pot and the trivet it sits upon. Then, I quickly clean the outer, 6 quart, pot. I pour the hot soy milk into the pot again, this time through the 2 layers of sifters to grab most of the particulate bean material (AKA Okara! Great stuff! one cup of soy beans gives me a cup and a half of okara (how’s that work?) and about a half gallon of soy yogurt. I time my soy milk making to be done with it in the evening time. Then, I pour the soy milk through the duo strainers back into the 6 quart pot. Next, check the temp and monitor until it gets to about 110 degrees F. At that temp, I can add my bulk probiotics. I use the NOW Foods bulk probiotics and add a half a teaspoon, gently swizzling it into the soy milk for maybe fifteen seconds. Once it’s mixed in, I put the lid back on and select “YOGURT” setting for 12 hours. All done. Next morning, in fact, this actual morning, I just checked my yogurt and it’s about ready to turn off and pour into my half gallon glass milk bottle to put it in the fridge. I love it, use it in everything: beans, salads, smoothies, and even my almost 20 year old chi-weenie pup loves it on his food, too! It’s a wonderful liquid yogurt, thick and creamy. Sometimes, I crave Greek yogurt, so when I harvest the yogurt from my IP in the mornings, I use my double strainer and set the setup in the fridge for 24 hours in a large mixing bowl. Next morning, the whey is in the big bowl and the thicker, creamier Greek soy yogurt is in the strainer! And it all started with the great ideas and process that you gave me using my instant pot. I used the quick-cooking (no soak) method, ran the resulting milk through two mesh strainers, and sweetened with honey. I found that we liked it watered down a little bit, to make it more like milk and less like soup. Absolutely delicious.5 stars
