Turned out perfectly. I used Nishiki sushi rice which requires 1.3 cups water per cup of rice but otherwise made it exactly as described and it was phenomenal. So I try to make it myself at home. After reading a ton of recipes, this is what I did. Cooked the rice 0 minutes plus full release. It came out perfect! The crab salad is just shredded (and chopped) crab sticks with kewpie Mayo (the spicy version has sriracha added). Once the rice is cooled, I use a mold to form the onigiris and wrap them in the seaweed wrappers.

(1 cup of uncooked sushi rice will make about 4 onigiris)5 stars
