Yes, you can use the master sauce multiple times.
The master stock can be kept in the fridge for 3 days or in the freezer for 6 months (for best quality)

You will want to reduce the amount of the light soy sauce. Dark soy sauce should stay the same!

The soaked up paper towel will help marinate the floating part of the eggs.

Leaving the paper towel in there the whole time will be great!
