I use REI’s own TiWare and Evernew. Frozen boneless chicken breast right on top of the rice. Weighing out the rice and broth in grams yields consistent results. The drippings flavor the rice nicely. Low pressure yields breasts which are more plump. Fresh herbs or dry sodium-free seasoning. The pots are expensive but will last forever while saving energy. Look for tight fitting low lids which also allow dry roasting and heating frozen burritos. Titanium does not retain heat and cools to the touch really fast. I.P. red sling allows the use of no-handle pots. Featherweight easy to handle and store. Purportedly Ti offers a health benefit over SS for chromium and nickel sensitive folks. A non-stick coating is O.K. as it won’t deteriorate in PIP.

The pot-in-pot method is an indirect heating method, so the cooking time will vary depending on how many ingredients you have.

I use duo crisp 6qt, and have problems making normal rice, esp pot in pot. (Risotto, briyani etc turns fine. I normally donโ€™t do plain rice in instant pot as I have a rice cooker.)

In your recipes, for direct in pot cooking, you said 3min high pressure and 10min QR whether the amount is increased.

But for PiP, you said 7 min for 1cup, 15 min for 2cups.

Would you please explain why the significant difference?

Btw, Iโ€™m Japanese, so I normally use short grain (sushi) rice.

It will take roughly 25 – 28 minutes plus another extra 1/4 cup of liquid to cook the brown rice properly with this method.
