I make potatoes for mashing without peeling, then use a potato ricer (looks like a giant garlic press) when you press the unpeeled cooked chunks, the skins stay behind in the hopper! Empty a couple of times and you’ll have beautiful potatoes no peeling required.

Cooking in liquid will leech out some of the sweet potatoes’ flavor. If you are planning to add all the liquid back to the dish, it will work fine. Adding seasonings inside will work fine as well 🙂

I love your site! I saw recipes that skipped the steamer basket but it seemed a bit odd to me to cook them in water that would be incorporated into the dish. However, if you use orange juice, it suddenly seems ok to me to incorporate. If doing so, would it make sense put seasonings inside to cook with it (like I do with the slow cooker)? Or do you think it is better to season afterwards?
