Yep.. changed my mind and I don’t regret it a bit! The only thing I wasn’t sure of was if I should make the full batch or half a batch

I used hot curry powder and love the spiciness of it. It was a bit thick so I added a splash of chicken broth in it with a little bit over 1/2 a cup of coconut milk. It is so flavorful by itself but goes up another notch with rice. I actually did a happy dance on my first bite. 😆5 stars

I used low sodium stock (didn’t have no sodium stock) so would eliminate the 1/2 tsp added salt next time. I used 2 Tbsp Madras curry powder – did not need cayenne. I added some chopped kale and served it over Basmati rice. A splash of fresh lime juice made it perfect. Yes, it’s one of the ugliest dishes I make, but that just makes me feel more virtuous while eating it. This is a great recipe. Thank you!5 stars

The ingredients are all things I tend to keep on the shelf, the prep is minimal, and the results phenomenal. I did use a whole can of tomato paste and a whole can of coconut milk, used 1 teaspoon powdered ginger instead of the fresh ginger, and I didn’t have broth on hand so I just used the equivalent amount of water and some bouillon cubes, but those are my only changes. This was so, so good with rice and buttered naan bread. Already planning on making it again.5 stars

The yellow lentils will just break down a bit more. I recommend following the green lentil cooking time.
