I followed these instructions and par-cooked my tendons for 1.5 hour with natural release. After 1.5 hour, the tendons were perfectly cooked to a gelatinous goodness which is the texture that I love. I did not cook them again with the beef because the tendons would have melted into the stew, I simply added them to the finished product. One downside about using pressure cooker is that the gravy that it creates during cooking is quite thin hence the need of a slurry. When I used to cook them nice and slow for a couple of hours, the gravy would become quite viscous to offer a much better mouth feel but who has a few hours to babysit a stew, right?!.5 stars

thank you for your kind words and question.

Lean beef stew meat will come out drier. Without knowing where the meat is cut from, it will probably take roughly 12 minutes + 12 minutes of natural release to cook.
