Since discovering this recipe during the early pandemic days, I’ve made it so many times. My mother likes it, my sisters, my mother in law, everyone requests that I make it. It’s so easy. I do sauté the ground meat first (I use any ground meat but turkey a lot) then add water and rice before putting it under high pressure. Sometimes I add sliced a ginger, half onion, dried minced onion, fish sauce at this phase to give more flavor. I also triple or quadruple the ground meat to make it more hearty and add much more chopped kale and spinach and lots of cilantro. Wonderful staple.

Excellent! Used 6 cups of water instead of 7. Perfect consistency. Added sliced ginger, dried scallops and preserved duck egg. Topped with green onion. The best congee I’ve ever made.

I added minced ginger to cook with this beef congee. Next time I will add beef or chicken bouillon powder and minced garlic. Would like to try it with ground pork next time. The texture of the rice congee is perfect!
