Th recipe says to use Choice (or higher) meat…..Do it! I used Choice and it was simply fabulous. I also added the giardiniera to the sauce while pulling apart the meat – AMAZING. Pepper flakes also were a hit. Perfect spice level. We love Portillos, and this was every bit as good! The minimal leftovers froze well in a food saver bag – GREAT to have on hand!!! Was it a 2″ thick chuck roast? I recommend choosing one that is well marbled for maximum tenderness.

Rump roast is quite lean and tough. I recommend using a well-marbled chuck roast for this recipe.
