I didn’t have any sage, but did find some poultry seasoning in my spice cupboard and added a couple of dashes into the other herbs and bay leaves. I didn’t have potatoes, so made a sweet potato casserole for a side. One thigh was plenty for the two of us (seniors) and the flavor is fantastic! The leftover sauce is in the fridge and I’ll lift off some of the fat and use an immersion blender to make gravy for the next 3 meals. Thank you for a very tasty and easy turkey recipe. P.S.
