I am going to make them tomorrow but can I use cold eggs directly from fridge or room temperature eggs?
I am going to replace rock sugar with sugar free stevia or monk fruit sugar substitute to reduce the overall calories. I will update you the result.

The flavor is soooo good. I do 8 eggs, but I like them a little softer so I do them for 4 minutes, but everything else is the same. Dark soy sauce mostly just adds sweetness and color so you can just omit it.
