Sorry for the late response and thank you for your question!

Boneless dark meat will work fine. You will want to reduce the cooking time by a minute.

You can double the recipe by doubling the spice/meat and increase the chicken stock by half.

I just tried it and it is amazing! I’ve been looking for this recipe but couldn’t find it until today. I tried this dish once in my friend’s house but she gave me the recipe in chinese and I can’t read chinese. I modified your recipe a little by using red jalapeños instead of dried chilies and I did not add more bell peppers at the end. THANK YOU!! Please keep posting authentic chinese recipes in English.
