This recipe was easy to make and tasted just like the dish at our favorite Vietnamese restaurant. This is my daughter’s favorite dish and she gave it a perfect 10! I followed the recipe, pulled out the bay leaves and ginger/lemongrass and thickened the stew just a bit. Love this recipe and can’t wait to make it again!

This is my favorite InstantPot recipe of all time. It has so many layers of complex flavor. I prepare it exactly as written and it comes out perfect every time. Even my picky “no stew because I had a bad childhood experience with chewy meat” husband requests it. To make it even more decadent we serve it with a baguette or over mashed potatoes. I’ve got it going under pressure right now and the house smells phenomenal. Thank you both for your inspiring recipes like this one. You are geniuses!

We made this tonight and followed the directions exactly, but added a small potato with the carrots. My husband ate it over rice, and I ate it with some baguette. This is such a good make ahead recipe for meal prepping because it’s so versatile. One of the issues we’ve found with making multiple meals is you get sick of it after a day or two, but since this can be served so many different ways it’s fantastic! I’ll probably cook up some vermicelli noodles tomorrow for lunch.

It made our house smell amazing, and tasted wonderful. Thank you again for another amazing recipe! I’ve made three of your recipes in the last month, and they all have been amazing. We’re looking forward to trying one of your chicken thigh recipes to meal prep for next week.

Vietnamese beef stew (bo kho) made in the Instant Pot! It was sooooooo good. Recipe from @pressurecookrecipes. My only change was I added a giant squeeze of Sriracha at the end and cooked carrots at the end.😋😋
