It’s been a long time since my tastebuds have been in heaven. I’m a good cook, thankfully, and so it comes easy for me and having grown up in many countries and cultures I feel like I’ve “tried it all”… But wow. The flavors here are surreal. I’m adding visiting Indonesia to my bucket list and trying all the culinary staples.

I followed the recipe to the T other than I’m using beef neck instead of Chuck.

This dish is amazing! I didn’t add star anise or cinnamon (only had a bit of Chinese spice so put a spoonful in instead) and didn’t reduce it to so much as I prefer the liquid curry sauce over rice, but my GOD, how lovely it was! I only added one chilli (didn’t find dry so chucked in a normal red chilli), and it’s plenty spicy (next time I will even reduce that as I have a kid to feed and his taste buds are still delicate).
