Here I am again to rave over this recipe! I forgot I left a comment before. I followed the recipe to a T and even broke out the bay leaves. 5 minutes for boneless, skinless thighs – 10 minutes NPR! Oh my goodness. All the salad was assembled just waiting for shredded chicken. So moist and juicy. I poached chicken breast last time and they were dry. I’ll stick with thighs, save money, and enjoy dinner more.

Wow, absolutely scrumptious! I’m snacking on some of the pulled chicken with its tasty broth as I type this.

I first discovered Amy + Jacky when learning how to cook hard boiled eggs that were easy to peel when I was gifted an IP Mini 2 years ago. You guys are SO AWESOME !!!!! You have mastered every possible nuance of using IPs — to perfection! I can count on your recipes to be consistent and reliable each and every time!

I like cooking all kinds of animal protein in my IP because it is easier to ensure that the results are very tender and easier to chew / swallow than with other cooking methods — especially when following Amy + Jacky carefully tested instructions. I have 3 medical conditions of the esophagus that can make swallowing dense foods like cooked animal proteins difficult (think impaction hazard). I love my IP and I LOVE Amy + Jacky’s recipes! I’m going to have to try them all!5 stars

Very easy and simple but some of the best chicken I have ever had. I’m a picky eater AND a good cook, so I’m hard to impress! But this chicken was so juicy and well-flavored that I didn’t even add salt or pepper or garnishes, just ate it plain. I used one less garlic clove than specified; organic Better than Bouillion for the broth; minimal salt since the broth was salted; an unmeasured splash of soy sauce; and the bay leaves. I also added some onion powder. Truly lovely. Thank you for helping me get my protein intake up! I used a 2018 IP, maybe the Duo 6 quart, not sure.5 stars
