Made umami beef stroganoff tonight. My 2-year-old ate two bowls and hubby loved it too. Lots of flavors and super rich. Might be common knowledge to others, but learned the importance of bringing the sour cream to room temp and mixing it with an equal part of liquid before combining. The result was a super smooth sauce. Photo of hubby’s leftovers for work this week since we all were devouring it before I thought to take a photo.

Super flavorful. I doubled mushrooms and was heavy (about 150%) on everything else. Seems like a very tolerant recipe in terms of proportions. I think a secret to this recipe is the thin slicing. I’ve never cut chuck roast so thin. Sharpen your knife first!

Amy + Jacky, My family already has a favorite beef stroganoff recipe, which my grandson requested for his birthday dinner just a couple of hours before dinner time yesterday! Not enough time for the traditional 2-hour cook time for sure. I went straight to your site and, with your help, was able to adapt my recipe to the Instant Pot using your directions. It was wonderful and you saved the day with your meticulous research and instructions. You are so greatly appreciated for the research and the work you do. A tablespoon of tomato paste might help to increase the umami value, and add another layer of flavor.

Beef stroganoff… since I picked chuck roast from Costco and I only used half of the beef for this dish, I am also going to make Irish beef stew next week

Dear Amy & Jacky, Your Beef Stroganoff Recipe is just Amazing! We Just love making this and following your Recipe. All the work you too have put into perfecting these dishes is inspiring. The flavors that come through elicit yummy sounds all through the meal. We use more Paprika in the recipe than called for and really like the effect.
