I made this instant pot chicken and rice for dinner tonight and it was amazing! The recipe was so easy to follow and I managed to make it while carrying my 5 month old baby. The chicken was tender and the rice soaked up all the delicious flavors. It came together quickly and saved me alot of time. This is perfect for busy parents!

This turned out great which wasn’t surprising given all the great ratings & reviews! I forgot I didn’t have tomato paste, used whole grape tomatoes & used chicken breast. I used a 3 qt Instant Pot and didn’t change anything. Pot was full to capacity but no issues. Always a pleasure making one of y’alls recipes~thank you!

This recipe was so good. I followed the instructions exactly and I still got the burn notice on my instant pot, which was frustrating. So no pressure actually released when I released the valve, however, when i opened it everything was cooked perfectly, and it was still very delicious. I added a little salt after it was done which perfected the flavor. I think next time I will cook everything in the instant pot and then transfer everything to a second inner pot (i have a spare) that is not hot and hopefully that will solve the burn notice problem. Either way I highly recommend this recipe. It is so delicious and everyone of my family loves it!

This was so easy and TASTY. Cooking the rice in the pot with everything makes it so flavorsome and it’s also incredibly convenient. I will be making this again as a regular. I will say that next time I will probably add more chicken but that’s just because I prefer a higher ratio of chicken to rice.

For the IP, turning on or off the heat doesn’t matter as the keep warm mode will not kick in well after pressure is released.

Do you leave the Keep warm function on after or turn off while depressurizing? Overall new to the instapot love this so far!

Such an amazing base recipe!

Browned the chicken in peri peri seasoning.

Added capsicum when sautéing the onions and garlic and added a sad zucchini and a sad ear of corn from the bottom of my fridge.

Ended up being an amazing zesty one pot rice meal.
