Once again this year I used this recipe for Corned Beef and Cabbage. I think this is 4 years in a row I’ve used it because it always turns out soooooo good! This year was no exception as it was super tender and delicious.

Since it was just my wife and I, there was enough left over for a sandwich the next day. So I thought I’d make a Reuben sandwich because I really like those. Didn’t have the thousand Island dressing so I whipped up some mayo, ketchup, and sweet pickle relish and that was perfect.

Then, when I went to pull out the sauerkraut, there wasn’t any left. So had to make the sandwich without it. It was no less tender and flavorful but didn’t have that sour, acidic, and salty edge that you get by adding sauerkraut to it. Nonetheless it was still delicious and I’ll be making this again next year when I splurge and fork out the $$ for Corned Beef Brisket.

So still making it and it’s great!

We read a post where someone used 1/2 vegetable broth & 1/2 water for their recipe. I tried that and had success. The Pressure cooking time was spot on. Perfect, tender and very juicy corned beef. The addition of the potatoes and cabbage was ..oh so delicious. I appreciate your recipes since I’m not a very creative cook. I love my instant pot and your recipes. Thanks.5 stars

Also I wanted to try a 41/2lb round corn beef. It was awesome, the best corn beef, not only I ever had, but my other 9 guest ever had. It was my first time to use a round corn beef and I will use it from now on. I followed your tip if your corned beef is thicker than 1.5 inch, adjust the time by adding 5 – 6 minutes for every additional 1/2 inch. The time ended up 100 minutes. The flavor was great even with the packet of spices that came with it. Next time I’ll make the spices.5 stars

I ended up not using the included spices packet and instead followed the recipe exactly (but I didn’t rinse my meat since i wasnt sure why it was a step). It turned out ultra tender but I realized too late that there was no salt. If you usually cook with salt, I would recommend salting your meat and broth before cooking like normal. The ruebens brand corned beef I used was barely salty so don’t assume it’ll be seasoned! Next time I’ll probably throw in some fish sauce too5 stars

I’m using the old-style pressure cooker, much like my mom used in the 60’s. I think it’s a Presto (brand). The meat I purchased had a seasoning packet, but that had no black pepper included, so I added a few additional spices in small quantity. The recommended cooking time seemed long, but the cut came out fine/tender though it had shrunk to half its original 2.5 lb. size. I thought the short time for the veggies to was not long enough so added a few minutes. That was a mistake. The potatoes and carrots lost much of their firmness. Otherwise, everything was great.5 stars

Turned out tough and lacked flavor. I have cooked it in the slow cooker for the past years. I used this recipe this year and it turned out perfect. Thank you for the additional time for thicker slabs. These seasonings were so much more flavorful because of freshness and larger whole seasonings. I only used 5 cabbage slices which was perfect. I also used part chicken broth and water. Broth was amazing.5 stars
