I have to wait until pressure comes up and then shut it off. I bought a twin pack of chickens. After cooking one, I cooked the other in the broth. Both were about the same, the broth was much better after the 2nd chicken cooked in it. i’ve had good results dry brining chicken before poaching. I will try that next time with this method5 stars

Tried it this evening and it turned out great. I wanted to see for myself the texture of the white and dark meat and I was very pleasantly surprised. Both white and dark were moist and tender, no dry white or rubbery dark. Interestingly, the dark meat came out as white as the white meat. Okay yes, I know breast from thigh and leg… ahem. Anyway, I dont eat the skin so straight from the Instant pot was all I wanted. the broth tastes delicious yet as suggested needs to be diluted to reduce overall sodium content. A+ technique ladies!! I just poached the chicken in water with nothing else. The resulting chicken and broth were perfect for the soup I make. I then used the carcass to make more broth. (I didn’t use all of the spices or the broiler finishing because I make chicken every week for my dog and cat.
