It’s absolutely incredible, and potentially even better reheated on the stovetop the next day. I’ve made it with and without sherry wine, great either way. Also have used pre-cubed ‘beef stew’ beef from when the store doesn’t have the right cuts and it’s still delicious.

This recipe was my introduction to this site, and because of it, I always search + “amy and jacky”. Never disappoints.5 stars

Following the Instant Pot Beef Stew recipe from @pressurecookrecipes with additions of a couple of tablespoons of our dried shiitake mushroom powder, this came together in about an hour and a half and tastes like its been slow cooking for 24 hours. Such basic staples coming together to create a delicious, satisfying and nutritious meal. Shame this slack baker didn’t have any bread to hand for mopping up! 😂5 stars

Made this for the first time for the family. Hubby and kids approved. Kids are super picky. So the fact that they ate it all up and super fast, makes this a win in my book! Came out flavorful and not salty. I thought it was going to taste more like this Chinese beef stew that has somewhat similar ingredients, looks similar, and also uses tomato paste but it tastes different, not a bad different, just different. This is more like an American beef stew. Great stew nonetheless. I will be making this again in the future. Thank you for creating/sharing another great recipe! You guys are my goto for instant pot recipes.5 stars

I used a 2 lb chuck roast cut into pieces. I have a small 3 instant pot mini and it gives me a burn notice when I saute in it, so I always do that on the stove and deglaze that pan. One more step, but I get good results with it. I had no Sherry or white wine so went with a good red that I used for marinara sauce and it was delicious. This will be my “go to” beef stew recipe.5 stars

If you are in Canada, chuck steak is usually called blade or top blade steak.

If you are using Beef short ribs at 2″ thick, the cooking time will be 42 minutes + 15 minutes Natural release.
