It takes a bit of time but oh so worth it in the end. I have never had fish sauce before, but I have a batch in the last stage and I used fish sauce this time. I’m anxious to see how it turns out. It’s been a while since I’ve made my last batch, and I forgot how cooked down the onions get. I think I’ll add more than the half pound that gets reserved and added later on next time I make it.5 stars

Very tasty. When tasted before the suggested ending simmer I missed the taste of the sherry that is often in it. Added a 1/8 of a cup of sherry prior to 10 minute simmer and it turned out more to our liking. The process really decomposes the onions and we missed the texture of more onions slices in the soup. All that said, we’ll make it again!4 stars

The addition of the fish sauce and the soy sauce I think contributed to the smoothness of the soup. I used vegetarian oyster sauce instead of the fish sauce and coconut aminos instead of the soy sauce. I followed the recipe as printed but didn’t use shallots. Will definitely make again!5 stars

Delicious. I love the subtle addition of the fish sauce. I am not a big fan of sherry as a flavor, but the white wine for deglazing and the subtle addition of fish sauce was excellent! I chose to use bone broth instead of stock (no other changes). It added a little more body and some wonderful extra flavor. The protein and collagen in the bone broth makes this an ideal light, yet complete meal in itself. Skip the bread if you want a low carb version. I used a low carb tortilla to float on top of the soup as a base for the cheese before putting in the oven. Same presentation at the table upon serving! Deliciousness in a bowl! I did add 16oz of sliced cremini mushrooms – sauteed first in large pan without any oil/butter – done during initial 20 min pressure cook and added to final pressure cook along with reserved onion, fish sauce, soy, bay leaf, stock, etc. Also, after 0 min/20min NR, I added 1 tblsp butter blended with 1 tblsp flour and 1 tblsp of heavy cream – a kind of buerre manie to add a bit of thickness/richness to broth. Into the oven with baguette slices and gruyere – so tasty! Thank you for the inspiration and excellent directions!5 stars

A neighbor shared a BIG bag of onions with us, so naturally… it was time to celebrate the memory of him with something he truly loved. I had my IP for a year and a half before he passed, had thought about it, but never made it for him. I know he was beaming over me as I made our bowls. Savory, rich, flavorful…. So, so, so worth all the tears – not all to be blamed on ALL THOSE ONIONS!! absolutely need to add some onions at the end – I missed that note (and had sliced the onions pretty thin, not having any instructions in the ingredients or steps) – so I ended up slicing a couple more onions to sauté and the simmer in the soup to give it more body.

Absolutely Worth Making!!! I hope if you haven’t tried this, that you will. You won’t regret it! Note: I didn’t have wine, used ginger ale instead. 😁5 stars
