All the natural release times were 10-15 minutes longer than you guesstimated, but pots are different and I guess mine is slower. I followed the recipe exactly, measuring out in grams all of my ingredients (thanks for listing weight in addition to cup/tsp measures!). I did the Fancy version and when doing the sauté with all the herbs and spices, it smelled wonderful. But I never tasted those flavors in the final product and my beans were not cooked through at the end. The first batch I put in were fine, but the second batch no. I had to continue cooking on the stovetop for another 30 minutes to get the desired texture/softness. Maybe that’s when I lost all the flavor? (I kept looking for when to put the fish sauce in 😉 JK). It was just…bland. I had a tub of pico de gallo and added a few ounces to each bowl which seemed to help. This will not be a keeper for me, sadly.3 stars

I usually do not like to deviate from your recipes but my mom is visiting and she wanted “ham hock and bean soup.” I had a couple of frozen smoked turkey legs I wanted to use. The family recipe has dill and carrots.

I used Option B, with the HUGE turkey legs that barely fit in the pot. I added a bunch of sliced carrots and substituted the dill for the spices and added all the second round.

Mom said, “this is the kind of soup that makes one want to lick the bowl.” What more to say? Easy as can be and delicious! Thank you!!!5 stars

I used white beans and salt pork and followed the rest of the dump and go recipe. It came together in about 5 minutes. So nice to have a delicious hot dinner after a little nap! LOL. I diced up a hot chili pepper (thai chili I think, a small green one!) and threw it in with the beans to cook. The result was a wonderfully spicy, smoky pot of ham and beans. I used Better than Bouillon chicken stock for the base — I knew it would come out more salty this way, but that’s how we like it. Followed everything else to the letter for the fancy version. Paired it with Glory seasoned greens for a complete meal. Thank you for another winner!5 stars

I made the fancy version (almost) exactly as written in my 3 qt. IP Mini. Here’s how I did it without halving the ingredients:
I did the first pressure cook as written, with all ingredients an inch below the fill line. Then I stripped the ham from the bones and put the meat only, along with the cup of beans and the 3 cups of broth, back in the pot. Still came in below the fill line. Pressure cooked as written.
I loved the flavor of the soup and smoked ham, and the spice ratio was exactly right. The mixture of soft and less soft beans was wonderful, too. Thank you both for creating such fine recipes!5 stars

I made version A in my Instapot Duo 7 and they tasted wonderful and the texture was perfect. I used chopped up ham instead of a ham hock and used chicken stock with salt to cut down on the amount of table salt that would be needed to flavor the beans. I will make beans from now on like this.
