Some Instant Pots are more sensitive to the burn error. If this is the case, you can use the pot in pot method to cook this.

I would recommend increasing the cooking time to 10 minutes at High Pressure + 10 minutes Natural release.

I tried twice and on both occasions the rice stuck & burned even before the Instant Pot pressurized. I even added more chicken broth the second time but it was no better. I checked the sealing ring & it seems to be fine. Any idea what might be happening!
I did not rate the recipe as I think the recipe is fine but I must be doing something wrong!! πŸ™

So much so that just cooking 1 cup of rice is not enough, plus sometimes I just want to use up a whole can of coconut milk at once. So I triple the recipe:
3 cups Jasmine Rice
1 (13.5oz/398ml) can coconut milk
550 ml water
2 tsp organic chicken better than bouillon (already salted so no need to add salt or just use unsalted chicken broth if that’s what you have and add salt 3/4-1 1/2 tsp salt).

I soaked and rinsed my rice thoroughly before starting, but still, it was a bit too chewy for our tastes. I took the suggested advice and added a bit more stock, and I also added some ghee, and this made a nice, soft, fragrant rice. We enjoyed it with a Jamaican Brown Stew Chicken. Delightful! I will be putting this rice into regular rotation in our household, as my whole family loves the notes of coconut to elevate a regular rice dish.

Coconut cream will work. If it is too thick, you will have to use more chicken stock and less coconut cream.
