My 25-year old son and I made this egg salad together last weekend in Instant Pot Duo Crisp + Air Fryer, and it came out terrific. We really enjoy the flavors and the crunch. He doesn’t know how to cook, but he found this to be quite easy and a fun mom & son cooking experience. During these inflationary times, I find that the prepared salads at my local Whole Foods can be quite expensive, so it was nice to be able to make this egg salad at home. He’s enjoying bringing it to work for lunches this week. Since I didn’t have full fat mayonnaise, I used Kraft Mayonnaise with Olive Oil and it tasted fine. Whole Foods seemed to be out of rice wine vinegar, so I used white wine vinegar instead. Thank you very much for another delicious recipe. I appreciate what you do and your positive energy.5 stars

For many years I have chopped my eggs in a large bowl with a pastry blender (not the wire kind) such as the one, or similar, from Oxo:

Just break up the eggs into large chunks and drop them into the bowl, add the remaining ingredients as you measure them, and chop away. No mixing or folding in the mayonnaise mixture.

I did a dozen in the IP the other night to make egg salad but they wouldn’t peel decently (a bit too old I think) so I got frustrated and threw them all away. This egg loaf concept, however, is going to eliminate any frustration I might have had AND make the chopping process so much easier! (I have my own egg salad recipe though, with shallots and parsley.) And after that I’m going to make White Cut Chicken for chicken salad (and also dinner from the dark meat, yum!)

Not sure if this is the case. One of our Fat daddio’s pan removable bottom was bent and that would result in leaking.

You can check to see if there are some noticeable leaking spots and straighten it by hand.
