This has become one of my go to recipes. It never occurred to me that fried rice could be made in an Instant Pot. I made a half recipe with some minor substitutions based on what ingredients I had on hand. My original reason for buying an Instant Pot was for cooking brown rice as our old rice cooker took forever on the brown rice setting. As we only have brown jasmine rice in the house I substituted that for regular rice. No peanut oil in the house and I use Canola oil because of its neutral taste. I assumed that one reason for using peanut oil was for the nutty taste so instead of mixing peanut oil with the rice before cooking I substituted Sesame Oil. I had no fine salt so I used 1 Tbsp. of low sodium soy sauce and 1 tsp. of fish sauce instead. I added these to my measuring cup and then filled the measuring cup up to 7 oz with water which seemed to be the correct ratio for a half recipe. All the other ingredients were used in the same proportion for a half recipe. Tasted great and the sodium content was low for those concerned about their salt intake.5 stars

I did sauteed up some onion and added with the frozen veggies and added in a little soya sauce at the end. I did not have peanut oil, so I used half sesame oil and half veg oil. I then cooked up some chicken thighs in the instant pot and shredded up and added to the rice. Thank you for all your great recipes!

I didn’t have frozen vegetable mix. I twisted carrots in a zucchini noodle grater and chopped the carrot “noodles” instead of dicing.
I parboiled the carrots and fried some onions and put in a big bowl with a can of corn and the frozen peas.
I used a big skillet to fry the rice in one minute intervals. It was another pan to wash but I was able to wash the instant pot while the rice was frying. I stirred in the vegetables as directed.
I served in the skillet and still ended up with only one pan to wash after dinner.
Your recipes are so well tested, crafted, and written. It’s remarkable.5 stars

My husband thinks this is the golden recipe. I do sauté chicken tenders after I take rice out n add. My grandson works in an Asian restaurant on weekends as he goes to University. He says this recipe is better than anything. I do add at the end 1Tbsp of roasted sesame oil n 2 Tbsp of soya sauce. I must say it is so flavourful that I do eat it cold. Best ever.

I really liked this. I’m a new IP user and this was my first rice adventure. Total success! I didn’t have peanut oil, so I used toasted sesame oil for mixing with the rice and avocado oil for the sauté parts. It was a nice hint of sesame, without overwhelming the dish.5 stars
