I wasn’t expecting it to be as good, to be honest – I was worried about all the Worcestershire sauce, soy sauce and fish sauce making it too… something. But I prefer vegetarian recipes to meat recipes, and you guys get great reviews on reddit, so I tried it anyway, and we both loved it – me and my meat-eating partner.

I made a couple of substitutions: I didn’t have the tomato paste so subbed diced tomatoes (and forgot to reduce the water accordingly!). I didn’t have penne so I used farfalle, and may experiment with 3 minutes if I use farfalle again as it was a little soft. I had 3 old carrots in the fridge so shredded them and added them with the mushrooms and zucchini. AND I bought 2 zucchini by mistake, so used them both.

Verdict: delicious! Even my partner liked it and he is only happy when I make something with meat. Thank you for the recipe, and please add more vegetarian recipes!!5 stars

The pasta was al dente and the sauce was glossy and robust with lots of flavors! Sadly, I only have a picture of the leftovers, really, there wasn’t going to be any leftovers except I had to save some for a picture 🤣
Next time, I’ll double the zucchini and mushrooms but otherwise I would not change a thing (and I did use the fish sauce for the umami kick).5 stars

I was hesitant about the fish sauce but went with it and the dish is delicious, not a bit fishy.
Thank you for explaining the technique of sautéing the zucchini and then removing it until after pressure cooking. I use that technique in many recipes so my vegetables have some bite.
After pressure cooking this recipe I stir in shredded mozzarella then put the zucchini back in. Each serving bowl gets a dollop of ricotta and fresh basil garnish. Beautiful and delicious.
(The photo at the top of the recipe sure looks like it contains ground meat, not zucchini.)
