Along with cumin, I love toasting coriander seeds and then grinding them, providing a distinctive flavor that pairs well with the cumin. This will be one of the sides for our 4th of July taco party. Looking forward to sharing them with everyone!

We live at high altitude (6,000 ft), so our beans take longer to cook (1:30 hours). I usually chop up the (raw) bacon before adding it to the Instant Pot. Saves a step.
