This recipe was no exception – the congee was perfect and so flavorful. The dried scallops were a tasty addition – our Asian market carries the smaller scallops so we used Jacky’s conversion below (49g total scallops). Washing the rice a few times before cooking will reduce the overly starchy texture. You can also use less amount of rice to reduce the starchy texture.

Love the simplicity of this recipe. Before IP days I’ve cooked this via the stove and it’s a labour of love! Can I please ask if you ever experienced an overly starchy texture with congee cooked via IP? I find that difference in texture vs stove cooking and I can’t figure out why. I do use the preset Porridge function but I thought it’s the same as manual. What am I doing wrong?5 stars

The total volume (180g of rice and 1750g of water) is still roughly 1:9 on the video.

I recommend using the manual/pressure cook button for the recipe.
