I just visited the infamous T&T in Toronto last week and saw the veal brisket for the first time. I hope T&T will make this cut available when they open their first US location in San Jose, CA in 2025. Until then, I will resort to using beef finger meat. Boneless Beef Finger Meat is the thin strips of beef cut from in between the ribs. It’s extremely beefy, rich, and juicy. Hope this helps! 🙂
